Caviar 101
Why no metal spoon?
Caviar is delicate. Metal — especially silver — can subtly alter its flavor and leave a metallic aftertaste. Because caviar is lightly salted and highly nuanced, even small interactions matter. That's why it's traditionally served with mother-of-pearl, bone, horn, or gold spoons. It's not about being fancy. It's about preserving the purity of taste.
What does malossol mean?
"Malossol" means "lightly salted" in Russian. It's the gold standard in premium caviar. True malossol caviar contains just enough salt to preserve the roe while allowing the natural flavor, texture, and buttery finish of the sturgeon to shine through. Lower salt = cleaner taste = higher quality.

Remember — caviar is rich. A little goes a long way. It's meant to be savored, not scooped.
How long does it last?
Unopened and refrigerated (28–32 F), premium caviar typically lasts up to 4–6 weeks. Once opened, it's best enjoyed within 24–48 hours. Pro tip: Keep it cold. Store it on ice while serving. And never freeze it — freezing damages the delicate pearls.
How it's made
Caviar begins with sturgeon — ancient fish that have existed for over 200 million years. Today, the finest comes from carefully managed aquaculture farms. Sturgeon mature slowly — often 7 to 12 years before producing roe. When harvested, the roe is gently rinsed, graded, and lightly salted using the traditional malossol method. Every step is deliberate. Because with caviar, timing is everything.
